This colander is used for boiling or reheating ramen noodles in a saucepan and then draining them. This technique is called Yugiri (湯 切 り) and it removes water from the noodles to keep the ramen broth from getting thinner, but also to remove the sticky appearance of the noodles.
The colander is made of high quality stainless steel mesh and sturdy wooden handle at the end of which is a hook for easy storage in your kitchen. Of course, it can be used with soba, udon noodles but also all kinds of pasta!
